Tobago’s cuisine is quite different from Trinidad’s. For many, its signature dish is curried crab and dumplings. Because nowhere is far from the sea, and the fishing industry is still vibrant, seafood is always a good bet when you scan the menu – conch, lobster, king fish, mahi mahi, shrimp. The restaurant business is booming and you will not be spoilt for choice. You will find “traditional” international fare (aren’t visitors supposed to be addicted to steaks and fries?), but keep an eye out for local specialities. Many of the best Tobago restaurants have a wonderful ambience: al fresco dining with a view of the sea, a gentle cooling breeze, and fine “nouveau creole” food beautifully presented. But then, what North Americans call Soul Food is big in Tobago too. Root vegetables, creatively prepared with herbs and coconut milk, are the basis of coo-coo and oil down. Desserts use tropical fruits such as guavas, mangoes and pawpaws; ice cream is made out of everything from coconut milk to Guinness. Benne balls is a delightful (and somewhat jawbreaking) confection made of sesame seeds. Buljol is salted codfish shredded and seasoned with peppers, onions, tomatoes, and olive oil, often served in coconut bake. Coconut bake is a type of bread made with grated coconut. Coo-coo is a mixture of cornmeal, okra and butter worked into a dough using hot water, usually served with steamed fish and callalloo. Curried crab and dumplings consists of giant blue crabs seasoned with local herbs and spices, simmered in a spicy curry with coconut milk, served with flat flour dumplings. Oil down is breadfruit, boiled down with coconut milk and salted meat or fish.
